Glucose syrup is a sweetener that is typically included in confectionary, ice cream and a range of other sweetened foods. Medical experts advise that products containing glucose syrup made from wheat are still suitable for the vast majority of people with coeliac disease or those medically diagnosed as requiring a gluten free diet. The majority of wheat derived glucose (at least 90%) contains no detectable gluten. Less than 10% of wheat derived glucose might contain up to 10ppm of gluten (extremely low levels). Note that a Gluten Free label on a product overrides the ingredient list - it contains no-detectable gluten. The choice to consume products that are not labelled gluten free, and that contain glucose syrup made from wheat, must be made by each person in consultation with their medical adviser.

Products labelled ‘gluten free’
Products labeled gluten free have to have been tested by a NATA accredited laboratory as a gluten free claim can only be made if your product contains ‘no detectable gluten’.
Products that are gluten free by ingredient
If there is no ingredient in a product that is derived from wheat, rye, barley or oats, and no 'may contain' allergen warning then this product is 'gluten free by ingredient'. Allergens such as wheat, rye, barley or oats must be declared on the food packaging. It is also important to avoid cross contamination by avoiding products with statements such as ‘may contain gluten’.
Glucose, glucose syrup, caramel colour, dextrose and monosodium glutamate are derived from wheat but are gluten free and can be included in a gluten free diet.
